Using up leftovers from previous meals is a great way to save money. You could make them into a hearty soup or you could make them into a casserole.
Here is my casserole formula: 1 cup chopped cooked meat or fish (or other protein) 1 cup vegetables (peas, celery, mushrooms, etc) or sliced hardboiled eggs 2 cups starch source (cooked pasta, sliced cooked potatoes or cooked rice) 1-1/2 cups white sauce (homemade) or can of cream soup ¼ cup fl avor enhancers (olives, nuts, etc.) Seasonings (salt, pepper, herbs) Topping (croutons, breadcrumbs, shredded cheese, potato chips, etc.) Mix ingredients, adding more liquid (milk or soup stock) if it is too dry. Place in a buttered casserole dish. Add topping. Bake at 350 degrees for 30 – 45 minutes or until topping is browned and the liquid is bubbling.
Serve hot! Enjoy the taste and enjoy the savings.
A casserole can also be prepared the night before, and stored in the refrigerator ready to be cooked when you return home. In this case add any dry topping just before cooking so they don’t get soggy.
